Halibut in aluminium foil with vegetables
Ingredients for 4 portions:
4 pieces of halibut filet à approx. 120 g
Salt and pepper
4 tbsp Santini extra virgin olive oil VOM FASS
2 untreated lemons
2 red peppers
2 fennel bulbs
Preparation:
Preheat the oven to 200 °C. Season halibut filets with salt and pepper. Grease four pieces of aluminium foil (à ca. 21 x 30 cm) with some olive oil. Then put 1 halibut filet in the middle of each foil. Cut the lemons into thin slices and put them onto the halibut filets. Wash and dry red peppers and fennel bulbs and also cut them into thin slices. Lightly season them with salt and spread them onto the fish filets. Drizzle with the rest of the olive oil and fold the aluminium foil over the fish.
Put the 4 fish packages onto a baking tray and cook them in the preheated oven at 200 °C (fan oven 180 °C) for approx. 12 minutes.
We recommend rice as side dish.
